Ingredients

  • 2 Cup Wheat Flour
  • 2 Tbsp Ghee melted (plus extra for brushing dough)
  • 1/2 tsp Salt
  • 1/2 Cup Water
  • 2 Tbsp Vegetable Oil

Instructions

  • Place dry ingredients into a bowl. Add oil, ghee and water and mix until a dough is formed.
  • Knead about 5 min. until smooth (That's smooth, not sticky). Let stand about 5 min then cut into 8 equal parts rolling pieces into a ball and set aside in an oiled bowl. Cover and let sit about 30 min. (If making a filling this is a good time to finish getting it ready)
  • Roll out each ball on a floured surface to about 5".*
  • Brush with Ghee then fold in half. Dip in flour to prevent sticking.
  • Roll out again and repeat brushing with Ghee and folding.
  • Roll out dough a final time to about 6". Brush both sides with Ghee and it's ready to go on the heat.
  • Cook on a med low heat for about 2 min. until light brown dots form on underside of dough, then flip and repeat for the top.
  • Brushing with hot oil or Ghee during the cooking will encourage the dough to puff up slightly and will be even softer when finished.

Notes

If you are filling your paratha after you roll the dough for the first time add a large spoonful of your filling to each disc, fold it over and seal it. Reshape the dough into ball and roll out to 5" again. Follow the rest of the instructions.

Alfredo Sauce

A exceptional Alfredo sauce devised by me from a base recipe and trial and error through many iterations. Simply the best Alfredo sauce I’ve ever had.
